Banana Ripeness Note
For the best texture and flavor, use peak-ripe bananas. They should be vibrant yellow with zero green left on the stems, but before they turn soft or bruised internally. Peak-ripe bananas hold their structure cleanly in the layers while delivering maximum natural sweetness without getting squishy.
Ingredients
The Cookie Base & Layers
Biscoff Cookies (Lotus Biscoff)
Butter Ring Cookies (Lil' Dutch Maid brand, available at Dollar Tree)
The Pudding Base
2 boxes (3.4 oz each) Instant Banana Cream Pudding Mix
3 cups Cold milk
1 block (8 oz) Cream cheese, softened
1 can (14 oz) Sweetened condensed milk (La Lechera/Eagle Brand)
4 to 5 Fresh, peak-ripe bananas (sliced into rounds)
The Homemade Stiff Whipped Cream
1 pint (16 oz) Heavy whipping cream
½ cup Powdered sugar
1 tsp Pure vanilla extract
Step-by-Step Instructions
Make the Pudding Base: In a large bowl, whisk the instant banana cream pudding mix with the 3 cups of cold milk until smooth. In a separate bowl, beat the softened cream cheese and sweetened condensed milk until completely smooth and lump-free. Fold the cream cheese mixture into the prepared pudding until fully combined.
Whip the Cream: In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until extra stiff peaks form. Fold about one-third of this whipped cream into the pudding mixture to lighten it up, reserving the remaining two-thirds for your whipped cream layers and top flourish.
Assemble the Layers: In your 9x9 dish, lay down a mixed base of Lotus Biscoff cookies and Lil' Dutch Maid butter rings. Add a layer of sliced peak-ripe bananas, followed by a thick layer of the pudding base and a spread of stiff whipped cream. Repeat the layers until you reach the top of the dish.
Chill & Set: Cover tightly and refrigerate for 6 to 8 hours (or overnight) to allow the cookies to soften into a cake-like texture.

A Pro Tip on Banana browning (And Why You Probably Don't Need It)
If you're worried about your banana slices turning brown, there's a simple trick: slice your bananas and toss them in a small bowl of fresh lemon juice before assembling. Not only does the citric acid lock in their color, but it also adds a subtle, bright tartness that cuts through the rich pudding and sweet cookies.
That said, realistically? You probably don't even need to bother. Having made banana pudding enough times, I can tell you two things:
Bananas don't turn brown or mushy overnight, they hold up surprisingly well tucked inside those cold layers of cream and pudding.
More importantly, this dish never lasts long enough for browning to even become an issue anyway.
Treat the lemon juice bath as an optional flavor upgrade if you want that extra citrus tang, but otherwise, assemble your layers and don't stress it!
